I feel this is still ambiguous: are the colors on the card grey on a grey background or were they color samples, like shades of green, but converted to B+W in camera?

I'm curious where you heard that this 18-55 III is replacing the IS II? This is the first I've ever heard of such a lens and the latest kits are being shipped with the 18-55 IS STM as the market appears to move toward video.
Having a good camera with a sharp lens will get you that. Make sure you don't push your ISO too high and have good technique (using a tripod certainly helps). If you have to crop too much or don't control your aperture right then that will lead to loss of detail as well.
