From what I understand, and IANAL, the typical issue around model releases is not if you're allowed to take the image, but how you're allowed to use it. Also, this is a legal question; you wouldn't ask your barber for medical advice so you probably shouldn't ask photographers for legal advice.
@BartArondson Sounds similar to 'the most important equipment in photography is 6 inches behind the lens.' Great pictures have been taken with the worst equipment (see DigitalRev's cheap camera, pro photographer challenge on YouTube) and terrible pictures have been taken with the best equipment. Knowledge is key and there is no substitute, no matter what the sales rep says.
Could you possibly repeat your test, but use a ruler instead of a doorknob and indicate the distance from the camera to ruler and upload/link those files in your post/question? And don't crop the photos.
Think of DNG as a vendor agnostic RAW format; in this context it doesn't matter if you use DNG or not. What I would do (and did) was import your hierarchy as it is, then create a new one that is in the new format and move images over within LR. As you empty folders, delete them until they're all gone. Alternatively, you could set the destination of the import(s) to one folder.
@AJ I think it depends on how narrowly you interpret the original question. To me, this question is about using redundancy to prevent against data loss and not just can that specific camera model mirror one full SD card to another blank SD card.
If by HDR you mean tone mapping, I'd recommend against that as it can easily produce a look that isn't a good fit for real estate photography. It'd be easier and better to mask in the windows and lights.
