One cant know for sure of course, but often in food type photography, other substances are substituted that look like the real thing, but are somehow more photogenic.

I agree about the bounce flash, but softboxes and lightboxes are other indirect flash methods that I think are super relevant to Lego. At any rate +1

What zoom range are you looking for? You put 17-50 and 18-55, but are those representative of what you actually are looking for, or just some that you found? I personally was more interested in the 70-200 range for my first zoom.

+1 good suggestions. I think a nice hotshoe flash with a diffuser will help a lot. Another possibility for lens choice would be fisheye, but that is for something nonstandard. A wide or super wide, far open would be very useful though.
