Although I understand your caution for explaining how to edit the catalog file, your answer would be much more complete with instructions on how and where to edit the root folder path. This would be helpful for people who have never used a database but are still computer savvy. They could just make a backup of the catalog, try your method and revert if something goes wrong. If someone finds your answer now it will be extremely frustrating to see that you fixed it but do not explain how.

Hi and welcome to Photo.SE. Please take a moment to look at the guidelines. The question currently is very broad and is a bit leaning toward the "which brand is better" debate. If you want to upgrade your gear determine what you want to photograph (portraits, macro, adventure, time lapses, etc...) and what your requirements are and do search of the site to see if someone with similar requirements already asked a question about this.

If it turns out that the Canon software is faster you can keep the convenience of using Lightroom (i.e. the images are ready for editing) by setting up a watch folder. You can ask another question on that later.

Could you maybe elaborate on how you connect the camera to the laptop? Do you use an USB hub? Which USB version is used? Also: have you tried using Canon's remote capture application to see if that is faster?

I meant: aligning each image with the previous image using an overlay will probably take a very very long time, right? So is it feasible to align each image (probably several hundred) separately by hand (even with an overlay)?

Isn't a folder always sorted by name, date or some other property? I'm not aware of folders where you can manually sort the files. You could try renaming the photos in the user order first (Library -> Rename photos) with a sequence, then move them to a folder and sort them by name. If the filename starts with the sequence you will retain the user order (I think).

Ah, totally forgot. My use-case is slightly different though. I develop raw files in a "temporary" LR catalog, export them to jpeg and then add the jpegs to my "main" LR catalog. I don't keep the raw files (which is bad-practice). If you want another app to read the edits you could consider writing sidecar xmp files next to your raw files. But that's a different topic.

By "in Photoshop" do you mean using adjustment layers and such? Or just using Adobe Camera Raw, which is basically the same as Lightroom.

Not sure if there's a definitive answer, but I think folders are useful when you also want to access your photo collection on a machine without Lightroom, just via the Explorer (Windows) or Finder (Mac). If for some reason I'm unable to install LR on a machine, but I've organised everything neatly in folders I can still browse my collection relatively easily.

To me, a novice in electronics, it sounds that if your camera can take 250V and the flash only has a trigger voltage of 170V it should be fine. Am I responsible for any damage caused this experiment? Nope.
