Just buying a camera because "major people" (what does that even mean?) have the camera is not really the right approach to photography. Instead you should think in terms of what you need to do the photography you want and choose a camera that suits your needs (maybe it's not even a DSLR but a GoPro). Maybe I'm not familiar with some expert terminology (i.e. Projector Output), but it's not clear to me what your question is. Could you please clarify it with an edit? Do you want to photograph the image projected on a wall by a projector?

Far fetched but still: In this answer it is mentioned that when the blurring function is known the blurred image can be almost fully restored. Isn't this the case when using a Guassian blur? I think that function is only dependent on the radius, for which different values can be tried in the reversal algorithm until a satisfactory result is found. Or is this much harder to do than I imagine (impossible?)?

I think the assumption that you need 300 DPI is not correct. The required DPI depends on the viewing distance, and that distance is very different for a 16x8m banner compared to a 4x6cm photo print. Here's a previous question which might be helpful.
