comment RAWs looking massively different in Aperture/Mac OS Preview compared to camera preview and (Canon) PictureStyleEditor
RAW need to be converted to an image to be viewed. This image is just a bunch pixels. Since RAW processing is costly, these result pixels are often saved in one of the common image formats, most often JPEG.

comment Why is there an ISO setting when shooting raw?
I do not agree with the film analogy. Sensors use electronic amplification of the collected analogous signal while film changes overall sensitivity by actually changing the size of grains collecting the photons. If we apply this analogy to digital photography, we should change the sensor and use a lower resolution one (lower Mpx) to achieve higher sensitivity.

comment When I change the EV compensation, how will that affect my aperture, shutter speed, or ISO?
If you only use "round" ISO values (100, 200, 400, 800, 1600), it will be easier and still give you a rough idea of EC (+0, +1, +2, +3, +4).

comment Cheap panoramic setup
Note that high end options might be able to fit the budget by renting instead of buying. For example a Canon EOS Rebel XSi + Sigma 4.5mm f/2.8 Fisheye = 70 US$ for 3 days // borrowlenses.com/product/canon_bodies/Canon_XSi borrowlenses.com/product/Sigma_4.5mm_canon
