I am not familiar with a mac, What is Image Capture? Also, bit depth should completely depend on the camera and the image format. i.e. typical jpegs are 8-bit per color channel. If you want more bits, you have to shoot in RAW.

That image stacking algorithm might be specifically written to "enhance" the star trails. It might not work for all occasions.
