Using calibration by eye is better than nothing, but I have to recommend that anyone who cares about accurate results should buy themselves a monitor calibration device and let the device and appropriate software adjust things precisely. I recommend dispcalGUI which works even in popular Linux desktops.

I was kicking myself when I upgraded from Windows XP to Windows 7 because I found that Nikon had made it clear that they would never provide Windows 7 drivers for my Nikon Coolscan V ED slide/negative scanner, so the (perfectly good) Nikon software which comes with it would no longer work. (I know there are commercial software alternatives, but it was still a nuisance.) In short: be very careful to check your hardware and software requirements before you upgrade your operating system.

Use the Canon software to download the files to your computer. (It helpfully lets you select an option to download just new images and creates a new folder for each shooting date.) I like the Digital Workflow article for tips about processing your photos with Canon's Digital Photo Professional software, which handles Canon RAW files very nicely.

This is exactly why I've resisted buying the Sigma 50mm f/1.4 DG HSM Art Lens. Amazing performance for the price, but too many people say that Sigma have trouble keeping up with new Canon bodies.

Calibration is worth it if you treasure your images. When you've lovingly adjusted hundreds of digital images on an arbitrarily configured monitor, it's painful to realise that on a correctly calibrated monitor they all look too dark/light/red/blue/etc.

On the subject of colour management, be aware that if your monitor is not calibrated correctly you might be adjusting the brightness and/or colour to suit your eye on your monitor, and it might then look totally different on a properly calibrated monitor.

I don't know why manufacturers abandoned the technology, but I do have a Canon EOS 50e and a Canon EOS 5 with Eye Controlled Focus and I have to say that I found the feature very unreliable. When it worked it seemed like a great way to select a focus point. When it didn't work it felt like a great way to miss a shot while you tried several times to get the camera to select the correct focus point. It tended to be easier to select the focus point manually.

Are there any cases where light is reliably polarized in a certain direction? Am I wrong to think that removing reflections from shop windows would usually require a consistent orientation of the filter?

I did not realise at first that these were full-size images. Right-click on each photo and select "View Image" to see the image fill the browser window. Now I definitely see the smudgy, oily look described.
